Breakfast this Weekend?

Blueberry Coffee Cake

This is so tasty! A friend mentioned that his wife made it and I couldn’t get it out of my mind. When I asked her about it I was excited to learn it was in a cookbook I had, Simply in Season. When I made it for a larger group, I doubled the recipe and made it in a bundt pan, sprinkling the topping in the pan first.

1 c. flour (I used white/wheat)

½ c. whole wheat flour

½ c. sugar

1 T. baking powder

1 t. cinnamon

½ t salt

Combine in large mixing bowl.


1 ½ c. blueberries

1 t. lemon peel (grated, optional)

Gently fold in.


1 egg

½ cup milk

¼ c. butter (melted) or oil

Whisk together in small bowl. Add to flour mixture and stir carefully. Batter will be stiff. Spread into a greased 8 by 8 inch pan.


Topping:

1/3 c. sugar

1/3 c. whole wheat flour

1/3 c. walnuts or pecans

2 T butter

1 t. cinnamon

Mix together until crumbly and sprinkle over batter.


Bake in preheated over at 425 until top is light golden brown, 20-25 minutes. Serve warm or at room temperature.

Mmmm Granola!

This is the best homemade granola I've tasted. Antonia introduced me to it at Annie's shower-LOVE it! Now I just have to get the courage to try the homemade yogurt she says is oh so easy.... it intimidates me! This recipe is in my new More With Less cookbook (thanks, mom!)

Simple Granola

Preheat oven to 250.

Combine in a large mixing bowl:

2 cups whole wheat flour

6 cups rolled oats

1 cup coconut

1 cup wheat germ

(I added some slivered almonds, crushed walnuts & ground flax. do a bit less oats if you do this. you can also do half flax half wheat germ)

Blend together separately:

1/2 cup water

1 cup oil

1 cup coconut

1 cup honey or corn syrup

2 tsp. vanilla

1 Tbsp. salt

Directions:

Add blended liquids to dry ingredients and mix thoroughly. Spread out on 2 greased jelly roll pans/cake pan and bake 1 hour or until dry and golden. I mix it after 30 minutes. Store in covered containers for a week or freeze.

Mmmm Spinach Bars!

My mom brought these tasty bars over after Blaise was born. Makes a wonderful, high protein breakfast or a lovely brunch dish! Easy and quick to make!

Spinach Bars

3 eggs

1 cup whole-wheat flour

1 cup skim milk

1 tsp. salt

1 tsp. baking powder

2 T melted butter

2 boxes frozen chopped spinach (10 oz. each), defrosted, squeezed dry

1 lb. Monterrey Jack cheese, shredded (I used 2% mozzarella, I'm sure you could do cheddar too)

1 small onion, chopped

1/2 c. diced red peppers (I used Trader Joe’s tri colored frozen ones and cut them up with kitchen scissors while partly frozen)

(I added sausage last time I made it, mushrooms would also be good!)

Directions:

Preheat oven to 350. Whisk eggs, milk, salt, baking powder, butter, flour and several grinds of pepper in very large bowl. Add onions, spinach and cheese; mix well.

Spray a 9x13" glass baking dish. Spread spinach mixture into it. Bake for 40 minutes or until the top is a nice shade of golden brown. Let cool for at least 10 minutes before cutting.

Over Night French Toast

Here's a fabulous breakfast dish you can make, if you so desire, for your love, friends, or family on Valentine's day. Our friends the Donohoes made it for us when we visited them one time in KC-and we fell in love with it. It's so scrumptious!

Over Night French Toast
Ingredients:

1 loaf (8 oz.) French baguette, cut into 1 in. slices

4 eggs

2 c. milk

½ c. firmly packed brown sugar

1 t. vanilla

1 t. ground cinnamon

2 c. fresh or frozen fruit

¼ c. butter

¼ c. firmly packed brown sugar

Directions:

1. Arrange bread into greased 9x13 pan. In large bowl, whisk together eggs, milk and 1/2c. brown sugar, vanilla and cinnamon. Pour mixture evenly over bread; turn slices as needed to coat completely. Cover and refrigerate over night. (We sometimes put the slices into 2 dishes and freeze one for later.)

2. Just before baking, sprinkle berries over bread (make sure they are defrosted if using frozen). Heat butter with the ¼ c. brown sugar over medium heat until bubbly. Drizzle over berries.

3. Bake at 375° for 25-30 min. until set & crisp. If desired, dust with powdered sugar.
